Targe Boat Speeds
1. Can you/how do you record/calculate and display target boat speeds?
Are the "hidden" behind "performance"? or can you get the actual values displayed also?
2. Can these values, if calculated, be exported over NMEA multiplexer for display on for example mast mounted displays?

If you have a valid polar loaded into iRegatta, that polar holds the information about your target speed. In iRegatta settings you can set if you want you polar to be overwritten if you have better performance than what the polar holds.
Your current boat speed and target boat speed are compared to calculate the performance percentage.
Version 2.87 of iRegatta has been submitted to Apple for approval, once it's available you can choose the see the actual value for target speed in the race view (called "Polar Speed").
iRegatta doesn't currently send these values as NMEA information.
